AGEs: The Bad News
In my last post I explained what AGEs is. In this post I will detail why too much AGE is no good because of what happens in your body.
As AGEs accumulate in your body they produce oxidation and inflammation. You probably are well aware that many chronic disease, such as diabetes and heart disease, and even arthritis, are associated with inflammation.
Most of the warnings for AGEs, however, is directed to diabetes because the increase of glucose in diabetics accelerates the formation of AGEs. It is also linked to heart disease because the accumulation of AGEs causes blood vessels to stiffen so that the cells lining blood vessel walls do not work as well. AGEs can also raise the bad cholesterol which makes it more available to be oxidized and deposited in your blood vessels.
Recently Mount Sinai researchers reported that about 10 percent of the AGEs you ingest hang around so that more oxidation and inflammation takes place in your body. The 2007 study of the Division of Diabetes explained that too much AGEs in the diet overwhelms the ability of your body to remove these toxins which causes even more AGE to accumulate. This is a problem for seniors because it becomes more difficult to get rid of toxins as you age.
However, by making a few simple changes in how you prepare foods, you can reduce your intake of AGEs. This includes eating more fresh fruits and vegetables which is at the top of the list for good nutrition everywhere. In other words it is not just the calories and saturated fat in steaks that indicates they should be eaten only on occasion, but grilling on high heat creates advanced glycation end products which are products linked to aging and chronic disease.
You don’t have to give up your grilled chicken and steaks and burgers. You do need to eat them in moderation, very low moderation.
